hi, this is alia and today's episode is very exciting because we are going to learn how to cook something that not all people cook at home we are going to make musselsin french "moules" so when i go to restaurant, i notice that many people order them as an appetizer or as main dish with tomato sauce or broth or whatever. but i don't see many people cooking them at home and i think, the reason is they think it is difficult but today i am here to prove to you how easy it is to make mussels at home


they're super easy to make them they are delicious because we are going to make them moroccan style with tomato sauce and charmoula species. you are going to love this recipe and in top of that when you put it on table, people will think that you are a professional chef and i promise that so that is it! . . . let's start the most important step is this one, make sure that the mussels are fresh! the way you test it, is to put the fresh mussels in a large bowl filled with cold water.


the mussels are alive, and they will close when in contact with cold water. and if it is a little open, but gently press on it, it should close by itself. and if the mussel is open and doesn't close in cold water or when you touch it then remove it right away. it means it is dead the mussels are alive and they have to react to the cold water unfortunately, we should cook them alive but we might forget this fact when we eat them because they're very yummy! so, if one of the mussels is dead, it means it going to be toxic and you can get sick so, it is really really important


and also make sure you wash your mussels very well so, i'm ready to cook them in a large pot, add the olive oil and heat on medium-high heat add the plain tomato sauce the chopped tomato the crushed garlic add 1/2 cup of the mixed cilantro and parsley (we will keep the other half for later) and the spices (salt, pepper, cumin, and paprika) mix well. cover the pot and cook the tomato sauce for 5 minutes


after 5 min, when the tomato starts bubbling add the mussels to the pot. mix. this one is broken, so i'm going to take it away mix cover the pot and cook the mussels for around 10-15 minutes on medium high heat from time to time, check the mussels and make sure that there is enough of liquid you may need to add a little bit of water (if necessary) as you notice the mussels start open continue cooking


once the mussels are ready, add the rest of the chopped parsley and cilantro. mix. that is it now, i'm ready to serve them the mussels are ready. it was easy, great. i promise you, it is very easy easy recipe lt's like a dish from restaurant, like a professional chef make this now, i'm going to taste it for you you can serve it along with crusty bread ( moroccan bread or french baguette). bon appetit!
