today i will be making masala zucchini. this has a nutty and spicy flavor and makes a great side dish. i am using a popular bengali spice mix known as panch poran. panch poran is a blend of five spices and gives a very unique flavor to zucchini. this is a easy and quick recipe to make. this recipe will serve 3.


to make masala zucchini we will be using: 2 large firm zucchini which i have already sliced with the skin in about half inch pieces. and this will make about 4 cups of sliced zucchini. 1 tablespoon of oil 1/2 teaspoon of cumin seeds (jeera) 1/4 teaspoon of mustard seeds (rai) 1/4 teaspoon of nigella seeds (kalonji)


1/4 teaspoon of fennel seeds (saunf) 1/4 teaspoon of fenugreek seeds (methi) 3 whole red chillies 1/4 teaspoon of red chilli powder 1/4 teaspoon of turmeric (haldi) 1 teaspoon of salt 1/2 teaspoon of mango powder (amchoor) 1 teaspoon of sugar and about 1 teaspoon of freshly squeezed lemon juice.


so first 5 spices cumin seeds mustard seeds nigella fennel seeds and fenugreek seeds makes a panch poran spice mix. so you can mix all these together and then now you have panch poran. you can buy this spice mix available in indian grocery store.


heat is on, medium high. for this recipe use the flat frying pan. so first i will use the oil and wait till oil is moderately hot. oil is ready. so now first i will put this panch poran, mix of five spices. stir. add the red chilli. stir again.


red pepper turmeric mix it. and add zucchini. mix it well and lower the heat to medium. cover the pan and let it cook for about 2 minutes. so this has been about 2 minutes. so let’s check the zucchini. they are looking good.


so i am going to add the salt at this time. cover the pan again and let it cook for another 2 minutes. it has been again 2 minutes so let’s check the zucchini. it’s looking good and as you see it has left some moisture. now we are going to stir fry for about next 3-4 minutes. so zucchini should be not mushy it should be still firm and because we want all the zucchini to be in uniform cooking. so it needs to be stir fry.


so now make the heat to medium high. it has been 3 minutes, i am stir frying the zucchini and it’s looking really good and they are ready. so turn off the heat. so it’s time to add the sugar. mango powder and lemon juice. mix it well and zucchini is ready to be served. masala zucchini is looking great
