it's so cool being able to see this...we're in kedah malaysia and we're taking you on a behind-the-scenes tour of anepic kitchen, i'm thomas and i'm sheena and we're chasing a plate, we hope you'rehungry, let's eat! today it is all about laksa kedah, laksa is a noodle soupdish which is really popular here in malaysia and nearly every state has itsown version, we've come to a special restaurant zakaria laksa teluk kechai which makes their own noodles every morning before service let's goand find out how they do it we're starting lunch today in thekitchen watching the laksa kedah noodles and the broth getting made, so the fishis sitting there getting ground up over


here you've got these huge pots where thebroth is all boiling away so it's a sardine based broth and the mostspectacular thing is the noodle dough getting made in these ginormous wokswith huge fires underneath them just heating them up they are the biggestwoks i have ever seen and there's these huge balls of rice flour, like a ricedough which is being cooked in the water which will then be made into thenoodles or the mee for the laksa the smells in this kitchen are incrediblebecause you've got all the fish from the fish broth,you've got the fire so the wood fires are burning, the roof is all black fromyears and years of those fires burning


and watching this process being done isamazing it's so neat to be in this kitchen seeing this happening the guys are making the noodles now so they're popping the big balls of dough into the press and then the press is just pushing them through the noodle sieve and the noodles are dropping into a cauldron of really hot boiling bubbling water to cook, once the noodleshave cooked for a few minutes in that hot water the guy ladles them out with asieve and then he washes the noodles in cold water so they stop cooking andto get rid of the starch and then he pops them aside this is some incrediblyinteresting


we've got our bowls of laksa in frontof us and boy does it look good let me talk you through what it's madeup of so of course you've got these beautiful rice noodles that we watchedbeing made, there's, it's in a broth the broth is actuallyquite clear and it's a fish broth but you can see that actually the fish isall ladled out on top so it's quite flaky there's some chilli, sliced green chilli inthere there's this local herb which is daun kesom and which is laksa leaf,then there's grated or shredded cucumber there's a dollop of this coconut sambal,there's a wedge of lime which i'm going to squeeze all over it and then thisfruit or slice of fruit here is asam


keping which is quite a sour fruit andit's from a tree that's native to malaysia, i'm going to pour that limejuice all over the top to give it a sour hit and then of course i'm going toadd some egg so there's a whole little bowl of boiled eggs on the table here so i'mjust going to crack one open and then add it to my amazing looking laksa,alright i'm gonna give this broth a go see what it tastes like, mmm oh wow that squirt of lime has given it a really fresh zing and it's got a really beautifulmellow fish flavour, the fish favour's quite strong after watching those noodlesbeing made i've got to give them a go what i'm gonna do is just mix everythingup make sure all the flavours are


mingling and then try those noodles lookat them they're like rounded noodles and they look really slippery let's go mmmm whoa those are really special, they're chewy they have a real texture, bite a lot of the laksanoodles that we've tried in the past in kedah style are quite um they don't have any bite so they just slip down the throat these are almost, these are cooked al dente wow these are amazing these are some of the best rice noodles i have ever eaten in a laksa, they are absolutelyincredible and being able to watch them make it really makes this bowl ofnoodles or laksa, super special because you know how much hard work has goneinto making this


time to dive in and try this laksa kedah i'm gonna try a bit ofthis broth by itself first because as sheena spoke about it's very very thin soyou can see the fish is kind of in its own, own sort of topping and in the brothitself underneath is very thin so i've mixed in all of that coconut sambalor kelapa sambal so that's the orange let's just try that soupy thin broth haha oh my god wow that is a burst offlavour, the sardine flavour is very strong let's have a little bit moreoh wow it tastes beautifully of sardines that coconut sambal has just filled itwith a weird sort of creaminess even


though it's not creamy at all it has acreamy texture that's incredible i'm gonna try some of this this toppingso with the fish the daun kesom the herb, there is some cucumber in there just a little bit of cucumber and a little chilli look at that little green chilli inthere so let's just try that by itself to seehow the flavour is oh the herb has a really beautiful roundedherby flavour, the chilli that tiny piece really hit hard when i bit into it thatadded a beautiful spice now i gotta try it all let's grab some ofthis egg yolk look at that so creamy


some of these noodles, let's get thatdown whoa i can't even pick them up okay i've got a bit of everything on both,both spoon and fork this is unreal, wowyou can almost taste the effort that's gone into making it when we were in thatkitchen it was so, so hot and they're working so hard to get those noodles made andthey are phenomenally good i agree with everything sheena said they are the justthe best rice noodles i've ever had, the texture is completely different to anormal rice noodle which like sheena said can be very slippery, let's try somemore i'm lost for words this is so good solike i said they can be very slippery


but these have bitethey're almost like having a fresh pasta so not a dry pasta a freshly made pastawhich is often a bit chunkier and definitely has a bit more texture, wowthis is good and then you've got these cucumbers and onions in there so they'readding some crunch and some liveliness, unbelievable absolutely unbelievablebowl of laksa it was such a special experience watching those guys in thekitchen making the noodles that we're eating right now let us know in thecomments below what's the coolest kitchen experience you've ever seenwhere, when, what was the food, we wanna

these little banana leaf trianglepackages are on the table too now i think this is pulut sambal so pulutis sticky rice and sambal is a chilli sauce yes look at thatso it looks like a coconut based sambal and then you can see thatbeautiful shiny sticky rice so it's just because it's sticky rice it's one easylittle package let's just pop that in huh wow, it's quite sticky the sambal's amazing it's got a little bit of fishiness ,a lotof coconut, the sticky rice is soft but very sticky and it just comes offperfectly as one little bite that is absolutely brilliant i just i had thatas a finish after the laksa so that


beautiful flavour of the laksa pop one ofthose in that just rounded off the savoury side of this meal so so well we're finishing with a dessert called dadih so traditionally it was made with buffalo milk so sort of like a yoghurt but nowadays it's often made with agar agar just because that's a lot cheaperi don't know which this is but let's give it a go ooooo, ooooo, look at that wow it's so silky and wobbly ohh it tastes like a thick yoghurtbut it's also very silky so just slipped down my throat, has a little bit oftartness like that, that comes with you yoghurt but it is quite sweet as wellthat's like the perfect milk pudding, oh i
