after that, whisk on high speed with a handmixer till it foams very well. you can also use a stand mixer. it is advisable to use eggs that are at roomtemperature for this. so bring out the eggs from the fridge theday before you will make the coconut cake. when it foams up like this, start adding thesugar and whisk at the same time. keep doing that till the mix is so creamy and follows you like a ribbon when you removethe whisk. set that aside. melt the butter (i did it in the microwave)and mix with the conc. coconut milk.
the mixture should be warm, not hot. the link to the video of how to make freshconc. coconut milk should pop up on the screen right now. mix the plain flour, coconut flour and bakingpowder in a bowl. then sift that into the egg and sugar mixture. mix very well. add the vanilla extract if you are using it, then the butter and coconut milk mixture. again, mix very well ... mixing mixing mixing.
and it's ready to be baked. pour into a greased cake pan. then bake in a preheated oven at 180 degreescelsius that's 350 fahrenheit. see the coconut cake rising in the oven. do not open the oven till the cake is done. bake for 30 to 40 minutes or till the coconut cake springs back when you push down on it likethis. yes, when it bounces back. also when you put a knife into it, the knifecomes out clean.
